Classic Fruit Cake Recipe (No Chocolate)

Ingredients:

Dry Ingredients:
  • 2 cups (250g) all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp cinnamon powder

  • ½ tsp nutmeg powder

Wet Ingredients:
  • ½ cup (115g) unsalted butter, softened

  • ¾ cup (150g) brown sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup (120ml) orange juice

  • ¼ cup (60ml) milk

Mixed Fruits & Nuts:
  • 1 cup (150g) raisins

  • ½ cup (75g) dried cranberries

  • ½ cup (75g) chopped dried apricots

  • ½ cup (75g) chopped walnuts or almonds

  • 2 tbsp all-purpose flour (for coating the fruits)

Instructions:

  1. Preheat the Oven: Set oven to 160°C (320°F). Grease and line a loaf or cake pan with parchment paper.

  2. Prepare the Fruits: Toss dried fruits and nuts with 2 tbsp of flour to prevent sinking.

  3. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

  4. Cream Butter & Sugar: Beat butter and brown sugar until fluffy.

  5. Add Eggs & Flavoring: Add eggs one at a time, beating well after each. Stir in vanilla.

  6. Combine Wet & Dry: Gradually add flour mixture, alternating with orange juice and milk. Mix until just combined.

  7. Fold in Fruits & Nuts: Gently fold in the floured dried fruits and nuts.

  8. Bake: Pour batter into the pan, smooth the top, and bake for 60-70 minutes, or until a toothpick inserted comes out clean.

  9. Cool & Serve: Let cool in the pan for 10 minutes, then transfer to a wire rack.

For extra flavor, brush with warm honey or orange syrup after baking.
