Ingredients

½ cup vegetable oil

1 cup buttermilk

1 cup hot water or brewed coffee
For the Coconut-Walnut Frosting:

1 cup evaporated milk

1 cup granulated sugar

3 egg yolks

½ cup unsalted butter

1 tsp vanilla extract

1 ½ cups shredded coconut

1 cup chopped walnuts
For the Chocolate Ganache (Optional but Recommended!):

1 cup heavy cream

8 oz semi-sweet chocolate, chopped
Instructions
Step 1: Make the Cake

Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.

In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.

Add oil, eggs, buttermilk, and vanilla. Mix until combined.

Slowly stir in hot water or coffee until smooth.

Divide the batter between the pans and bake for 30–35 minutes or until a toothpick inserted comes out clean.

Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
Step 2: Make the Coconut-Walnut Frosting
